quick and healthy: ground pork and spinach stir-fry (paleo recipe)

Here's the 2nd installment of my Quick and Healthy series which I started to hopefully inspire you guys to  ride along my fitness journey through healthy eating and Crossfit!

Aside from being super delicious, this recipe gets plus points for several reasons.
  1. Kid-friendly - Like any other kid, my daughter isn't a big fan of veggies but she can't get enough of this.
  2. It's PALEO DIET approved - who knew Paleo cooking could be this easy and affordable?
Ingredients:
  • 1/4k lean ground pork (pasture raised if you can)
  • 1 bag organic spinach
  • about 5 cloves garlic, chopped
  • 1 onion, sliced
  • freshly ground pepper and fish sauce for seasoning
  • coconut oil

Saute sliced onions (til brown at edges), chopped garlic, ground pork in coconut oil. Pour in a bit of fish sauce (start with around 1.5 teaspoons, you can add more later).

 Throw in an entire bag of organic, pre-washed spinach, add freshly ground pepper, saute for a few seconds until the spinach begins to wilt.



Done!

Eat on it's own if you're on a Paleo Diet or with brown rice if you can't give up your carbs like me!
